So here it is... Whipped Cauliflower.
Ingredients:
- 1 medium head cauliflower, cut into florets
- 1/4 cup fat-free milk
- 2 tablespoons canola or olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon white pepper
- Place cauliflower in a steamer basket; place in a saucepan over 1 in. of water. Bring to a boil; cover and steam for 8-10 minutes or until tender. Cool slightly.

You can add a bit less liquid to make the mix more solid, but with this ratio they turn out light a delicious. I honestly think they are better than mashed potatoes (they even take less time to make).
I would recommend serving with steak (or another kind of red meat) and pair with a red wine such as Sangiovese, Syrah or maybe a Spanish Gernache or Tempranillo.
Bon appetit!
